Pancake Day is upon us and at Smeg we have a recipe for everyone; whether you’re gluten free, dairy free, in the midst of a work-out programme or just looking for the perfect sweet kick, we have the mix for you. In fact, with six recipes on offer, that’s one a day for testing before Shrove Tuesday so why not make a week of it!

Glorious gluten free pancake mix

When creating the perfect gluten free mix, precise measuring is crucial. Once you’ve made it, we recommend leaving it for at least 10 minutes before it hits the pan, the longer the better and overnight works a treat. Sprinkle with chia seeds and blueberries for an extra health kick.
Ingredients for four crepe style pancakes

  • 125g gluten free flour
  • 1 egg
  • 250ml milk

Dairy free pancake mix
Substituting cow’s milk has never been easier with a variety of alternatives available in most supermarkets. We liked them with either coconut milk or hemp milk for a slightly different taste. Perfect companions with a dusting of desiccated coconut and fresh berries.

  • 300ml coconut or hemp milk

Pumped post work-out pancake mix
Pancake Day is for everyone – even those on a work-out diet. By adding oats and protein powder to your pancake mix can help with the build and repair of muscles post workout.
Ingredients for six American style pancakes

  • 2 bananas, roughly chopped
  • 2 scoop vanilla protein powder
  • 2 eggs
  • 50g rolled oats
  • 2 tbsp coconut oil

Inspired Italian Ricotta Pancakes
The addition of ricotta to your pancake batter is inspired. It adds a rich, creamy and almost soufflé texture to your pancakes. Top it with ice cream, fresh fruit and a drizzle of honey and you’re onto a winner.
Ingredients for four pancakes

  • 2 oranges, zest of
  • 200g plain flour
  • 1 tsp baking powder
  • 1 egg, beaten
  • 200ml semi-skimmed milk
  • 220g tub ricotta

Beautiful banana pancakes
You don't always have to use flour in your batter – just a banana and egg combined into a smooth batter is a great alternative. Add halved blueberries or chocolate chips during cooking for an extra texture.
Ingredients for six to eight American style pancakes

  • 2 bananas
  • 4 eggs
  • Halved blueberries and/or chocolate chips for texture.

Perfect potato pancakes
These are a great savoury alternative to regular sweet pancakes. Make using cooked or left over boiled/steamed potatoes and top with flaked salmon, dill and a generous dollop crème fraiche for the perfect treat.
